Summer Fruit Banana Bread Recipe

(235kcal for 1/8th of the loaf with 4.5g of Protein)

Ingredients:
175g (6oz) caster sugar
2 large eggs
2 ripe bananas, mashed
225g (8oz) self-raising flour
1 teaspoon baking powder
2 tablespoons milk
1/2 scoop My PHD diet whey vanilla flavour
Handful of frozen berries (Use firm berries that are not too soggy e.g. I used the redcurrants and blackcurrants from my mixed bag of frozen berries from Tesco)
Method:
Preheat your oven: Set it to 180°C (160°C fan)/350°F/gas mark 4.
Prepare your tin: Grease and line a 2lb loaf tin with baking parchment or a loaf tin liner.
Mix the ingredients: Put everything in a food mixer and whizz on a medium speed for a few minutes - you will end up with a wet batter. Pour the batter into the prepared loaf tin
Incorporate frozen berries: Sprinkle the berries across the top and gently stir in, taking care not to overmix. Bake for about 1 hour, or until a skewer inserted into the centre comes out clean.
Cool and serve: Allow the banana bread to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.

TIP: I used frozen bananas in this Summer Fruit Banana Bread Recipe - I simply break fresh ones in half and freeze them to use in smoothies etc. For this recipe I just defrosted 4 halves in the microwave - 1 min on 600W, turned them, another 1min on 600W made them soft enough to mash up
